How long would it take for two not entirely fit bike riders to bike between Canberra and Sydney?

We are aiming to do it in one day. Is this possible or would it be recommended to stay somewhere over night? However we can't afford a motel. Are there safe places along the route where we can pitch a campfire and sleep for the night? Somewhere in a reserve? We just really don't wanna get stabbed.
